The Gideon’s Bakehouse Summertime Sweets are TOPS!

July 14, 2025
By

A new month is upon us, and with that, a brand-new set of 31 days comes a new cookie to Gideon’s Bakehouse in Disney Springs. To make July even more fun, the team at Gideon’s has also introduced to offerings to go along with the Flavors of Florida celebration. Ready to try them out? Join me!

I love new treats and sweets, so I anticipate the dawning of each new month in a similar fashion to a five year-old waiting for Christmas morning. I can’t wait to unwrap the new gifts that Gideon’s Bakehouse gives its intrepid fans each first of the month, and this month treat is quite a reward for those who stop by.

The reimagined Rocky Road Cookie awaits those entering the bakery this month, and it’s an gooey an incredibly chocolatey version of its former self. The cookie base is Gideon’s triple chocolate variety, but the addition of the house-made candied whole almonds plusses things up immensely. You’ll find the almonds both woven throughout and on top of the cookie. The treat is topped with marshmallows and then baked to s’mores-like perfection. You won’t want to miss it.

Also, starring this month through July 15th is Bonnie’s Cold Brew and the Key Lime Ice Box Pie. You read that correctly friends: there’s a pie at Gideon’s right now. It’s a an individually-sized pie, and it features house-made Key Lime curd that is so intensely pucker-inducing, rich, and incredible. You simply must add it to your must-eat Disney Springs treats list. It’s truly not to be missed.

One thing to know about the pie is that it needs to stay cool, which is a feat not easily accomplished in early July in Central Florida. That being said, if you’re looking for a treat to eat immediately, it’s perfect. Gideon’s recommends that you make sure to stick that spoon they give you straight down to the bottom of the pie to ensure that you get a bit of that buttery graham cracker crust with every bite. They’re not wrong.

The last treat to discuss today’s one that truly gave me. I love all things Gideon’s cold brew, but when I found out that the Flavors of Florida rendition included lemonade, I was a bit apprehensive. I was really concerned about what the acidity of lemonade would do when combined with the cool creaminess of their nitro cold brew. What was placed in my hand at the cash register was foamy on top with a clear line of demarcation between the lemonade and the cold brew. After taking video and pictures, my thirst got the best of me; it was time to dive into that cold brew, whether I liked it or not. I’m pleased to say that I enjoyed it. Seriously.

As I mentioned before, the lemonade is made in house, allowing it to be as fresh as possible. Secondly, the lemon taste itself is not at all leaning in the liquid dish detergent realm of things. It’s a nice, light, fresh lemon taste, that, believe it or not, paired well with the cool and creamy coffee.

I do recommend that if you try Bonnie’s Cold Brew this week that you be sure to stir it up with a straw before drinking it. Doing so allows the two layers to mix and mingle, resulting in a lightly citrusy first note.

All in all, I came away from my most recent trip to Gideon’s Bakehouse a winner. And it’s worth noting that so far this summer, I haven’t waited over 20 minutes in their standby line. I haven’t been there once recently when they’ve had to use the virtual queue, and my quick wait has been more than worth the effort.

Next up on my list? Stopping by during one of their two daily Hot Cookie hours. Believe it or not, I’ve never stopped by during this magical time of day when you can get a scoop of ice cream on top of a warmed cookie. It sounds like heaven on earth, and it’s a summertime priority.

It’s good to have goals, right?
